Pickled Grilled Vegetables – Now Why Didnt I Think of That

This pickled grilled vegetables technique was my favorite new discovery on the Kingsford University trip. Its quite a simple, and seemingly obvious trick, yet it never occurred to me. Its times like these when Im faced with the tragic realization that Im not as smart and creative as I think I am.

Basically, small pickling cucumbers (which Ive always called, "pickles," even if they aren’t pickled yet, just to be confusing), as well as other firm vegetables, are seared briefly over very hot charcoal, before being packed in the sweet and sour pickling liquid.

The grilling imparts a subtle smokiness, as well as a little extra sweetness from the caramelization of the vegetables. I can see these being a regular fixture on the picnic table during the upcoming grilling season. What a perfect compliment to a platter of barbecued pork, or grilled chicken.

These tasted great after just one day, and even better after three. Please dont ask me how long they will last in the fridge, as I believe they should be eaten before that would become any kind of issue. Ingredients:
(Adapted from a recipe by Chris Lilly)
6 pickling cucumbers
1 red bell pepper
1 cup sugar
1 cup white vinegar
1 cup water
2 1/2 tablespoons kosher salt, or to taste
big pinch of red chili flakes
12 black peppercorns
2 cloves garlic
1/4 teaspoon dried dill

Cinnomon rolls I have a hard time sharing

I am pretty sure if you stopped by my house with a plate of these you would automatically be my bestest friend. This recipe is from miss Jenny and let me tell you what, I (Karla) made these and they are AMAZING and easy! Another perfect idea to make and share this holiday season!

Ingredients:

2 cups warm milk

3/4 stick butter

2 eggs beaten

1/2 cup sugar

1 1/2 tablespoons of fast rising yeast

1 teaspoon salt

mix all ingredients together, add 1 cup of flour at a time until dough is not sticky(anywhere from 7 to 9 cups of flour)Let it rise for 1 hour.(if your using bread flour and you omit this rising)Roll dough into rectangle shapes(usually about a 1/4 inch thick)

The center is

2 cups brown sugar and

3 tablespoons Cinnamon

Mix that together

Spread a whole stick of soften butter on rolled out dough. Smooth the center all over the dough. Roll with rolling pin until mixture is into the butter

Roll dough up and cut into 2 inch pieces.Put into a well buttered cake pan and lay them a 1/2 inch apart from each other.Raise until rolls are touching each other. (maybe like 45 min)Have no gaps in the pan.

Bake at 350 degrees for 25 -30 min. or until golden brown( also depending on your stove)FROSTING

1 stick cream cheese

1stick of real butter

4 cups powder sugar

1/2 teaspoon of vanilla

Mix frosting together and when cinnamon rolls are done wait 10 min to frost Them.

Eat and Enjoy!!

hazelnuts, a swirl of Nutella buttercream and a few chocolate sprinkles.

And since theyre "mini", I would eat eat "many" of these!

  • How come its SO hard to figure out how to unsubscribe from Barefoot Contessas email?

I Have a Request!

As you can imagine, I get a lot of requests. I love the interaction with my viewers, and I try as often as possible to satisfy these culinary whims. But, its not easy. So, if youve made a request and I havent gotten to it, please dont take it personally (except for Pete, who wanted a classic Italian Lasagne with no cheese, meat products, wheat or salt. He also said he wasnt crazy about tomato sauce, but "use it if you have too").

As you can see from the photo, I do have a system set up for emailed requests. As soon as I get one, I print it out and stack it neatly on my desk. So be patient, I will eventually get to yours...as soon as I find it.

By the way, now that the site is pretty much set-up, I will hopefully be back to posting every week day. On the weekends Ill try to post some fun food stuff Ive found surfing the web. Anyway, keep those requests coming! Enjoy!

Can I do you now Sir

Can I do you now, Sir?

Its really quite surprising just where my blogging journey takes me and what I find out along the way.  As an OXO Good Grips Blogger, I was offered this nifty extendable duster to review and the first thing that popped into my mind was Mrs Mopp.  I had no real idea who or what Mrs Mopp was, just some sort of folk memory of the phrase and it being something to do with cleaning.  My search took me imediately to the radio show ITMA (Its That Man Again) which starred comedian Tommy Handley and featured many well known comedy actors of that era including Hattie Jacques and Molly Weir and Maurice Denham.  How incredible then, that a character from a pre-war radio show should endure until today!  I guess it would have been a programme listened to by my parents when they were children and the strength of the connection between the name of the character Mrs Mopp and her job as a cleaner has helped it to stick in peoples minds, as well as the catch phrase "Can I do you now, Sir".

 I cant claim to be the worlds greatest housewife, Anthea Turner and Mrs Mopp have nothing to worry about from me! As I live in an old house with lots of nooks and crannies, dusting can be a bit of a nightmare.  I loved the way you could get in between the newel posts with the long slim head of the duster.

 The long handle makes it easy to reach those out of the way places.

 My favourite thing about this duster is the way you can angle the head to dust round the corner!  There is a button on the side to adjust the position of the head so it stays in the place.

 The ladies got a little tickle too!

 Yes, that is a lot of dust and I am a slovenly housewife, but the tops of my doors are quite clean now.

The duster is attached to the handle with a pop fastener, so you can take it off and wash it, which I did.  No colour came out of the duster so its quite safe to wash it with other coloured items.  Ive only washed it once and a few bits of orange fluff came off it, but not a huge amount and easily removable. 

 I also tested the OXO Good Grips Dust Pan & Brush Set  the rubber lip on the dust pan means you get really close to the floor and dont end up with a line of crumbs underneath.  Not a lot you can say about a dust pan and brush - it works and the brush clips neatly into pan for storage.
