SANDRA’S 15 MINUTE SWEET and SOUR ALASKA HALIBUT
Our all-time ‘go to’ favorite sweet and sour halibut we end up craving from time to time... |
Serves: (6)
Prep/Cook: 15 minutes
INGREDIENTS
1/4 cup dark brown sugar
2 tablespoons cornstarch
1/3 cup cider vinegar
1-½ cup low-sodium chicken broth
¼ cup low-sodium soy sauce
2 tablespoons all-purpose flour
½ teaspoon kosher salt
½ teaspoon freshly ground pepper
1 lb. boneless skinless halibut fillets, cut into 1” cubes
2 tablespoons olive oil
½ red bell pepper, cut into 1” pieces
½ yellow onion, cut into 1" pieces
Pinch of crushed red pepper flakes
1 (8 oz.) can of pineapple chunks, drained and cut in half (reserve ¼ cup of juice)
½ teaspoon ground ginger
--Prepared steamed rice
METHOD
In a bowl, combine brown sugar and cornstarch. Stir in cider vinegar, broth, soy sauce, and reserved pineapple juice. Set aside.
In a resealable plastic bag combine flour, salt and pepper. Add halibut cubes and shake to coat.
In a small skillet, saute halibut in oil over medium-high heat for 4-6 minutes, just until lightly golden and halibut flakes easily with a fork; remove to a plate. Set aside.
In the same skillet, saute red pepper, onion, red pepper flakes for 4 to 6 minutes, just until vegetables are crisp-tender.
Add ground ginger, and pineapple to skillet.
Stir sauce in bowl then add to skillet while scraping up bits from bottom, and bring to a boil.
Cook while stirring for 2 minutes, until thickened. Reduce heat to low, and return halibut chunks to skillet; heat through for a couple of minutes.
Serve over steamed rice. ~ Enjoy!

Tip: Feel free to substitute halibut with the same amount of chicken, pork, or beef, although adjust cooking time accordingly.

Pistachio Crusted Rack of Lamb
Besides all the great opportunities for double entendres using the word "rack," this is a simple piece of meat to cook. If youre lucky enough to have a Valentines date that enjoys a nice big piece of red meat, this is a fabulous choice.
Also, one rack makes two perfectly sized portions, which will work out nicely unless you have some things planned we dont know about. And if you do, please keep them to yourself.
Garlic Ginger Salmon
I use this amazingly simplistic sauce on a piece of grilled salmon in the video, but it will work for any cooking method. If you are comfortable pan searing or broiling a piece of fish, this super sexy sauce will take it (and maybe you) to another place.

Penne Pasta with Spicy Sausage Ragu
This bowl of pasta passion is so easy, so delicious, and so satisfying, youll forget your trying to make someone fall in love with you. Which is perfect since that always makes it much more likely to happen.
Be sure to find out if your date likes spicy foods before pulling out the sausage for this recipe. It can also be made with milder, sweet Italian sausage. Another tip: buy and use Parmigiano-Reggiano cheese, to show them youre serious.
Spicy Shrimp and Grits
Shrimp and grits is a very simple recipe, as long as you get all your prep done before you start cooking. The shrimp only take a few minutes to sauté, so you dont have time to run around chopping scallions or juicing lemons.
Once everything is assembled, this recipe is a snap. You can make the grits a bit ahead, since they stay hot a very long time – [insert your own special Valentines "they stay hot a very long time" reference here!]

5 Minute Peach Sweet and Sour Sauce – Pardon My French
Technically, a gastrique starts with caramelized sugar, to which sugar and fruit juice are added, but for my purposes here in Food Wishes land, it was close enough. So, while I was putting this quick and dirty clip together, the working name was "peach gastrique." Then I remembered Im not French, and most likely neither are you.
At that point, I decided to simply call it a peach sweet and sour sauce. What it lacks in pretentious French cooking lingo-ness, it more than makes up for in accuracy and approachability. Beyond semantics, there really is no recipe here, but more of a ratio.
One part vinegar, two parts peach preserves, three parts chicken broth, plus whatever seasonings. Boil, reduce, and serve – and of course, enjoy!
Ingredients for 2 portions of Peach Sweet and Sour Sauce:
1 tablespoon sherry vinegar
2 tablespoons peach preserves
3 tablespoons chicken broth or other liquid (wine, fruit juice, etc.)
pinch of Chinese 5-Spice
pinch of cayenne
salt and fresh ground black pepper to taste, depending on what you are serving it on (mine didnt need any, since I was serving over nicely salted, crispy duck skin).
